Sometimes a girl needs some chocolate.



Doesn't this look good?  This what the hubby will be enjoying for our movie time snack (every night we watch TV together after the kids go to bed).  Guess how many points this candy bar is?  15!  Yes 15 points!  I had a little square the other day and so not worth it (my opinion).

Instead have one of these:


Yumm and for only 2 points + you could have 7 of them.


Chocolate, granola, pretzles and only 2 points.  How can a girl go wrong with one of these? My circus (aka family) are always on the run so I keep a box in the trunk of my SUV for when I get hungry.  It helps me avoid the french fries at McDonalds.

These are Special K bars.  Click on my good finds tab under my header to see a picture of the box.  Look at the photo carefully to make sure you get the right ones.  Not all of their bars are 2 points and not all of them taste as wonderful as this one.

5 point Enchilada baby!



Have you seen this stuff at the market?  Well I bought some, tried it, and it was awesome.  I followed the recipe on the back of the container and tweaked a little to lower the points.  Here is what I found:


Chop up some green onions, cube about 3 cups of cooked chicken breast, and add to a pan.  Cook on medium heat adding a can of diced tomatoes (drain them first) and 3/4 of the Santa Fe cooking cream.  Mix all together until hot.

Then take your 1 point tortillas and put the mixture inside, roll and place in a 9x13 pan, and top with the remaining cream.  Bake at 350 degrees for 1/2 hour.

I topped mine with salsa.  The hubby and grown gal topped theirs with cheese, sour cream and salsa.

These weigh in at 5 points + each.  Pretty dang tasty for 5 points, so I had 2.

Happy Cinco de Mayo Folks!


Ever since I had the grown gal, who happens to be half Hispanic, I have been celebrating Cinco de Mayo with her.  We always go out for a great Mexican dinner, which also happens to be super fattening.  This year I will celebrate with one of my 2 point burritos.  The grown gal is also so grown up now, that with two jobs and a boyfriend she rarely has time to celebrate with me.  So I think I am on my own this year.  Maybe for dinner, the hubby and I will take the little people to Del Taco for a few 3 point + tacos. 

This is how I do my burritos:


Take some of these 1 point + for 1/4 cup


Slap those beans on one of these 1 point + tortillas and microwave for 30 seconds.


Top with lettuce, onion and some 0 point salsa.

One of the many Benefits of Losing Weight...


One of the many benefits I've gained from losing so much weight is that I have been healed from my sleep apnia.  Having sleep apnia was really hard.  Think about starting a new marriage with a wife that totally shook the house with her snoring ( I love my hubby).  Think about how romantic it is to be with a wife that is hooked up to a machine at night (poor hubby).  Think about me not breathing all through the night, then not being able to sleep with that dang machine and mask hooked up to me.  It was a complete mess.  Now, the hubby says I don't snore at all!  I sleep so well and wake up feeling much, much better.

No more being afraid to go to bed, not knowing if I would die in my sleep.


No more night stands that look like this.


No more of these stupid, expensive tests.


No more sleeping like this guy


No more cpap machine, no more oxygen, no more mask, and lots more sleep!

See it wiggle, see it jiggle...


NO, I am not talking about my butt, although it does wiggle and jiggle.  I am talking about Jello!  Did you know you can have a serving of sugar-free Jello for 0 points +?  Boo yaw!

How do we Jazz up this sugar-free Jello?  I tried my Momma's idea and loved it! It is simple just add fruit.

Here's how Momma and I jiggle and wiggle:  One box sugar-free orange jello, one can of "no sugar added" mandarin oranges.  Make according to package directions and add the fruit before setting.  It really makes you feel like you are having something naughty.   You know what I mean?  Like you need a good spanking.


I like to top mine off with some of that ready whip stuff.  Did you know a serving of that is 0 points also?  Hot Dang!  Do you have a favorite jello/fruit combination?  Next time, I am going to have pears and sugar-free, cherry Jello.  Get in my BELLY!

Squishy Squash...


One of the fun things about going over to Momma's house is that she always feeds me.  My mom is the best cook I have ever known.  Lately she has been amazing at feeding me healthy foods.  One of these foods has been butternut squash.  Oh yeah made this momma's girl happy and satisfied! 


Start with your squash.


Cut off the ends.


Slice down the center.


Clean out the seeds and other stringy innerds.


This is where the Fat Lady in me would put real butter and brown sugar, but the new and improved me, ShrinkaDink, puts nothing inside.


Wrap each one in foil and toss in the oven at 350 degrees for 1 1/2 hours or until tender.  Momma puts a pan under hers in case of drippage, but I have never had a problem.


When done baking, remove foil and fluff up with a fork and scoop the good stuff out into a bowl.


 Squirt some spray butter all over it and salt and pepper to taste.  This 0 points + veggie is so delicious, I could eat it every day!
