How about eating some cardboard?

A lot of buzz going around about these crackers.  Why?  Because they are only 1 Weight Watchers PointsPlus for 3 crackers.  Wow 3 crackers!!!

Would you eat one alone?  Heck no!  Although I have never eaten cardboard I can imagine that these puppies would taste just like it.

But, with a fresh tomato from the garden and a little salt and pepper, it wasn't so bad.

But, dipped in my fresh homemade salsa really did it for me.  Yummy!  I know these would be great with some low fat cheese too.  Good find!

Cereal

A few weeks ago my Weight Watchers friend, Deanna told me about some Fiber One cereal that was very low in points.  I finally found some at the local grocery store, but it was almost $5.00 a box and me not being a cereal person in the first place decided not to buy it.  Well guess what surprise came with the Sunday paper last week?

A sample of the Fiber One cereal I was wanting to try.  A 3/4 cup serving is only 2 Weight Watchers PointsPlus and only 80 calories.

I tried some today and guess what?  I liked it!  Of course it would have been a lot better if they added little chocolate squares, but it was pretty good for only 2 points.  So once my samples are gone (I get 4 Sunday papers) I am going to buy my own box.  I think I would even like it for a little snack without the milk.  Good find!  Thanks Deanna and thanks Sunday paper!

Diet Root Bear Float...

Over and over and over I hear people talking about a diet root bear float, but have never tried one because I HATE diet root beer.  I actually dislike most diet drinks unless it is diet cola of some sort.

At my last Weight Watchers meeting someone once again talked about the diet root beer float.  The next day I had a party at my house.  The person that brought drinks brought a mixture of drinks that included diet root beer.  With permission I put one in my fridge for later use.  Well today I made my first diet root beer float.

My ingredients, Diet (barf) root beer and whipped cream (yummy).  I know some use Cool Whip, but this is all I had on hand.

I froze my root beer for an hour before I started to get some ice going on.  I do this with my Coke Zero all the time for a copycat Slurpee.

Added my cream.  The cream is 0 PointsPlus per serving, but I used 2 servings so it ended up being 1 PointPlus.

Blend it up.  I used my little hand blender, but you can use anything you want.  I am thinking a Magic Bullet would come in handy for things like this.

And here you have it a Diet Root beer Float.  Some people love them and eat them everyday.  I tried it and I didn't like it.  (it's the Diet Root Beer, blahh).

Mom's Prize-Winning Zucchini Casserole...

My garden is growing loads and loads of yellow squash and Zucchini.  The hubby and I have been eating it every day, but we were getting kinda sick of the same old squash until I made this....

Yummy!  I ran the recipe through the Weight Watchers recipe builder online and this weighed in as 4 PointsPlus for 1 serving.  The recipe said it served 9, but I am a big eater so I divided it into 5 servings.
You can make it less points if you omit the oil and use Pam and use a low fat cheese.  You can find the recipe Here.  Enjoy!

Turkey Turkey Gobble Gobble...

I have tried so many lunch meats and by far this one is my favorite.  It is my favorite because it is only 60 calories and one Weight Watchers Points Plus for three (yes three!) thick and juicy slices.  Wrap some in a wheat tortilla with lettuce and a low fat ranch dressing, liven up a salad, roll up for a snack or just have a delicious sandwich.  So good!  Yummers!

Another soup....

I had the privilege to shop at Walmart at 1:00 am with no children.  I was enjoying it so much that I decided to look for some "good finds"  I am getting pretty good at guessing points and came home with this soup hoping my guess would be right.

And I was.  This was only 1 Weight Watchers Points Plus per 1 cup serving.

It was chunky like the Progresso soup, but the broth was a bit thinner.  It was yummy, but I liked the Progresso 1 point soup better.  Of course I ate the entire can and it made a nice 2 Points Plus lunch.

Happy Birthday to my Grown Gal!  I can't believe I have a 20 year old.  I love you Grown Gal!

Good mail!

I got this postcard in the mail.  So cool to get something good instead of a stupid bill.

No it is not an advertisement, it is a real life handwritten note from my Weight Watcher's leaders.  They are proud of me!  I needed this card.  It will keep me motivated for sure.  Thanks ladies!

Pan Cake Contorl...

I picked me up some of this pancake batter over at my local Wally World.  It was a bit pricey, but I bought it because it was a bit lower in calories then the mixes and I thought it would be a good way to just make one pancake without a mess.

This is my little 2 Weight Watcher's Point Plus pancake.  Yummy in my tummy and only 80 calories.  Does it look good to you?  Wait it gets better.

Sliced bananas, yummo and no extra points go with it.  Look what I added next...

Syrup! Log Cabin sugar free syrup.  Heck it was sugar free and didn't taste all that fancy being sugar free and all, but for 1/8 cup it was 0 Weight Watchers Points Plus and only 10 calories.  Can't go wrong.

I have to say this is the best 2 Points Plus breakfast that I have ever had.  It was super fast to make too.  Oh and the little people loved me squirting pancakes out of the can with their initials.  I made my hubby some hearts today.  Yes I did say these were for me, but I can't help sharing the fun.

I got my bling!

Look what I received last week...

I finally earned my WeightWatcher's key chain.  Boy oh boy did it take me forever.  I had my 16 week charm and my 5K charm just waiting for the key chain.  My WeightWatcher's leader, Cyndy was so sweet to give me all the bling to go with it as if I were to have lost the 140 lbs with the WeightWatcher's program (yes, I am now down 141lbs).  This made me feel so special to get recognized publicly for something I had worked so hard on.    This may sound strange, but if it weren't for the support from Cyndy and my amazing friends over at WeightWatcher's on Saturday mornings, I would have given up by now.  This last bit of weight loss has been so hard, frustrating and slow.

Happy Birthday to my Hubby today!  It will be a fun day full of my homemade icecream cake and eating out.  I hope they don't take back my bling at next weeks meeting.

My new friend the steamer!

My brother Lizard told my Momma about his steamer and how much he loved making his brown rice and veggies in it.  Momma headed to the store and bought her one and she also loved it.  So of course I had to go and get me one.  It was only $25.00 and the best kitchen appliance I ever bought.  I guess you could say I am in love with a steamer.

I have been steaming all kinds of stuff like cabbage.  It is so yummy steamed and with spray butter, it is even better!

Fresh green beans with butter salt.  Ahhhh so tasty!

Squash and zucchini right from my garden and carrots too.  Delicious!  Look what else...

Chicken??!!!  Shut up?  No I wont!  This baby makes the most tender and moist chicken in only 25-30 minutes.  I have even cooked rice on the bottom while the chicken cooked on top.  You can also use the steamer as a crock pot.

Thanks Lizard and Momma for telling me about my new buddy!  Hurry over to Costco because you never know when they will stop carrying these babies.
